Ionic gelation

The reaction between ions of opposite charge begins the cross-linking process.

Ionotropic gelation occurs when an ionic polymer interacts with another of opposite charge. Here, cross-linking begins. This phenomenon involves the production of hydrogels characterized by a spherical shape in which hydrophilic and lipophilic components can be efficiently trapped inside the capsule.

The advantages:

  • good organoleptic qualities and odor masking
  • method that does not require the use of temperature

Characteristics

  • pearls with dimensions between 20-1000 um, payload up to 70-80%
