Microencapsulation by coacervation consists of the formation of oil-containing droplets..
This process occurs when a homogeneous solution containing charged molecules undergoes a liquid-liquid phase separation, which results in most cases from the association of molecules of opposite charge; the shell of the droplets forms thanks to a cross-linker.
